The Best Cookies

I have a confession to make. When baking the slutty brownies the other day, I could not find any cookie dough mix (on a box)… This has actually happened before so I knew what I had to do; I had to mix my own dough (which is actually quite easy). The bonus was that I had enough dough to make a few cookies the next day.

I have tried several recipes but I keep getting back to this one from Loui og Bearnaisen

You need the following ingredients for 12 cookies

120 g sugar
140 g soft brown sugar
140 g butter (not cold)
1 egg (large)
240 g wheat flour
1 tsp baking powder
½ tsp baking soda
1 tsp salt
½ tsp vanilla powder or vanilla extract
150-200 g chocolate (chips or coarsely chopped) – can be replaced by nuts or berries


1. Mix the sugar, soft brown sugar and the butter at a low speed until you have a homogeneous mass
2. Add the egg and mix again
3. Mix the flour, baking powder, baking soda and salt in another bowl
4. Add the flour mix slowly while mixing at a slow speed
5. Add the chocolate
6. Leave the cookie dough to cool in the refrigerator for at least one hour – preferably for up to 24-36 hours (yes, this can test your patience)
7. Split the dough into pieces of 70 g and roll the dough into small balls
8. Put the balls on baking tray covered with baking proof/grease proof paper. At a maximum I put 8 balls on each tray
9. Bake the cookies in the oven at 175 degrees Celsius for 16 minutes (15 minutes= a little soft, 16 minutes=regular 17 minutes= crispy)
10. Remove to cookies from the oven and leave to cool
11. When cool, store the cookies in an airtight box

And there you have it. The BEST cookies.

    1. I completely understand that. My guess is that it is possible to make something “similar” with almond and buckwheat flour.
