Chia pudding

At the moment this is my “go to” breakfast. It is really easy and leaves me feeling full for hours.

The recipe is simple:

Ingredients:
1,5 cup of almond milk/coconut milk
2 tbsp. of chia seeds
A pinch of vanilla (not vanilla sugar)

Mix the ingredients and leave it in the fridge for an absolute minimum of 60 minutes (preferably overnight) – then eat!

I usually mix the ingredients the night before and leave it in a closed jar in the fridge until the next morning.

This time I had my chia pudding with hemp seeds, almond splinters, pumpkin seeds and some fresh fruit on the side, but this is a recipe that can be varied in so many ways:

Add cocoa powder for a chocolate feeling, add ground cinnamon powder and a pinch of cardamon for a chai-ish flavor, add peanut butter (always a success), blend the pudding with fresh strawberries for a more milkshake-ish texture etc.
